July 2021 Hops Brew Club Meeting Minutes

Attendance: 11

Topics of Discussion:

We need a membership list for insurance purposes.  Insurance premiums for 2021 have been renewed by the Brew Club at no cost to the membership, just email us if you consider yourself “active”.

The Lions Club Event is being held on October 9th, 2021 at DeerHaven CampGrounds. The style is open, so brew your favorite batch of beer and join the fun. If you haven’t already, please let us know if you will be attending and pouring.

Officer Nominations & Elections are needed. Three of the current Officers (President, Vice President and Secretary) are stepping down.  We would like to have the transition take place at the Lions Club event, so nominations will take place at next month’s August meeting and voting at the September meeting.

Samplings:

Eric B:  Blue Loon light Ale, kit beer in the style of blue moon. 5.7% abv. This was a nice beer with a barley and caramel sweetness and amber color.

John M:  Cream Ale- 5.6%  19 IBU-  Helga hops, some 2 row, Vienna, and wheat malt, Cellular Science Cali yeast produced a smooth beer that was well received.

Chris H & Frank W:  Bananza Hefe 5.9%  Hanks Hefeweizen Kit Beer utilizing an Omega Yeast formulated to remove spicy esters and leave only a banana flavor, with Tettnang Hops. This beer had definite banana aromas and flavors with the presence of vanilla, and was easy drinking.

Wes A: Pale Ale 5.5%, using pale malt and flaked oats, some caramel 40 and Centennial hops. A nice brew that had a nice bitterness with a silky mouthfeel from the flaked oats.

Todd S: Wes’s Triple Perfection 7.5%, Brewed on April 26, 2020, incorporated vienna & golden pils, Willamette & Saaz, with orange peel and ½ ounce of Licorice root.  Overall a pleasant brew, with a dry finish.  The consensus was that the Licorice was a little too prominent

Brian G:  Hopscotch- Brewed in 2016, it was sweet and had a definite butterscotch flavor that benefited from being stored cold for 5 years.

Wes A: Brown Ale 6.3% 27 IBU, Pale Malt, Caramel 120, Chocolate Malt, flaked oat, baking soda and Centennial hops. The chocolate malt came through a tad strong, with a little bitterness, but overall a nice beer.

Matt B: Commercial offering, Ommegang 3 Phils Blueberry Coffee.

Eric B: Jeb’s Cider.  This was a completely wild cider, made from wild grown apples and left to ferment with natural wild yeasts.  This was a very tasty cider, well done Jeb….

Chris H & Frank W : Substantial Shozen one, Ginger Beer at 7.7%  3 lbs 12 oz of fresh ginger and a bunch of spices that steeped for 20 minutes, 2 lbs of turbinado sugar , and US 05 yeast.  Excellent flavors and aromas, the ginger comes through with a little warmth and blends well with the steeped spices. The extra sugar added to raise the ABV may have added a bit extra sweetness but still a very good and well liked beer.

In the Fermenter:

Wes A: Oktoberfest, Strawberry wine, Dark Ale, and a few more I missed.

John M: Steam Beer

Eric B: Belgian Strong Dark Ale

Chis H. & Frank W.: Cinnamon Cranberry Mead

In conclusion, it was a nice meeting and great to see everyone that attended. We would love to see the numbers increase for the next meeting.  The Legion has offered to host us again on August 20th, and will let us know a few days before what the dinner will be. Hoping to see you all there!

December 2019 HOPS Brew Club Meeting Minutes

Attendance: 18

Thank you Todd & Susan for hosting the annual December meeting/Christmas Gift exchange party. Thank you to all the participating members for all the wonderful food, treats, and fun gifts that were shared.

There were no old or new topics of discussion brought up, which led to the beer style tastings of the month.

Style was Belgian Dubbel : overall Impression: A deep reddish-coppery, moderately strong, malty, complex Trappist ale with rich malty flavors, dark or dried fruit esters, and light alcohol blended together in a malty presentation that still finishes fairly dry.

1: Matt B. : Commercial beer: La Trappe Trappist Dubbel by Koningshoeven Brewery, which happens to be one of only a handful of authentic Trappist Breweries remaining in the world.  This was good, with some sour notes, maybe due to age, as it was cellared for a few years.

2. Frank W. : Commercial Beer:  Ommegang Dubbel Merlau, with merlot grape juice and aged in red wine barrels. This was dry with a little oak and definitely finished with wine flavors.

3. Eric B. : Dubbel Labrador Dubbel:  a mix of Pilsner, Pale, and Munich malts, with some Light DME, Caramel Crystal, and a Pound of light Belgian candi syrup, made for a very tasty beer.  Eric harvested the yeast from his Brett beer which added to the complexity. Well done, excellent, its damn good, were heard across the table.

4. Chris H & Frank W. :  Belgian Dubbel   14lbs of grain including Marris Otter, red wheat, Special B. and cara munich were brewed with some Dark candi sugar, then fermented with White labs 530 Abbey Ale yeast and produced a well liked brew. Good job, nice, I like it.

5. Alden B. : German Dunkle  was about 1 year old. Fermented with a lager yeast. Had a nice dark color, robust aromas, with a mild mouth feel. Almost like a porter, very nice, well received.

6. Brian G. : The last of Brian's Super Mario Rye Cereal Beer.  Rye Malt, Honey Malt and 4#’s of sugar, aged very well with the fruity cereal flavors predominately coming through.  Nice beer, very good.

7. Tood S. :  Bliss McGirr,  A Scotch Ale, came in at 7%, with 10 #’s 2 row, 1.5 #’s of Brown sugar, Hallertau and East Kent hops. Brewed on Oct 6th it was a tasty Ale for a festive occasion. Very good, I like it, and well done, could be heard among the christmas clamor.

8. Topher. : Belgian Golden Strong Ale, kit beer used DME (dry malt extract) candi sugar, East Golding and Saaz hops. A relatively young beer (only brewed in September), was very nice and should age well for the style. Nice Job.

9. George M. : Commercial Beer:  St. Bernardus ABT 12 Abbey Belgian Quadrupel, a very nice beer. Got good remarks around the table.

10. Eric B. : Thor’s IPA with Cascade & Chinook,  A Black IPA. using wet locally grown hops, from Catskill Hops Farm, 14 #’s of Pale malt, & 1 # caramel 60. A very nice beer, and surprisingly not as bitter as one would think based on the amount of hops. 16 oz of chinook, and 8 oz of cascade. Really good.

11. Chris H & Frank W. : Mixed Berry Cider, A Cider House Select cider kit got the thumbs up. Fruity, berry, raspberry comes through. Brewed on oct 13th, kegged Oct 28th. The overall volume was reduced from 6 gallons to 4.5 to increase the ABV’s to 6.8%. This was very good, and paired well with the cobbler. Nicely done.

12. Chris H. : Mystery Beer:  a bottle found in the basement with no label.  Light amber color, slightly bitter, not unpleasant, alcohol prominent, astringent, with fruity/solventy aromas.  Style still unknown.

So that wraps up another awesome year of Homebrewing fun. We’ve welcomed a few newcomers, shared a lot of laughs, drank a lot of good brews and ate some good food.  It’s always a pleasure. I believe we are an awesome group of people, from all walks of life, who have been brought together by our common love of beer and the brewing process. We’ve created friendships, that like a fine wine, only get better with age.  Cheers, and Happy New Year to all.

Upcoming styles of the month:

January 2020  is Wheat wine
February Cereal beer: It’s the annual cereal beer competition. Remember 25% of Grain bill must be cereal, Still time to make one. Have some fun and make it now. You can always make a small batch.
March is open
April is SMASH
May is Kellerbier

November is wood-aged
December 2020 is Belgian Tripel

October 2019 HOPS Brew Club Meeting Minutes

Meeting was held at the American Legion Post 259 in Oneonta on 10/18/19 at 6:30pm. Members in attendance: 12

We have another New Member John M.; welcome to the Club!

Topics of Discussion:

Todd & Susan have once again graciously offered to host the December meeting (date TBD), and we will be doing our Cutthroat Christmas Gift Exchange. If you wish to participate, bring a beer/homebrewing related gift (wrapped). Try not to spend more than $20.00.

We are looking for beer style suggestions for the months of 2020. Bring your ideas to the next meeting or feel free to contact us before then. The upcoming month’s styles we do have are:

November style is Brett
December is Belgian Dubbel
January is Wheat Wine
February is Cereal Beer (25% of the grain bill must be boxed cereal; Oatmeal and Grapenuts don’t count)

The HOPS for Sight Lions Club event held on September 28th was a great success. It grossed around $3500.00. Thank you to all of the brewers who supported this event by donating your time and beer!

George M. discussed doing an event with the Cooperstown Lions Club on Columbus Day Weekend of 2020 in Cooperstown, possibly in conjunction with Professional breweries. With the Cooptoberfest festival being pulled from the area, this would be a nice way to help raise funds for a great charity. Ommegang is tentatively onboard. Also mentioned was maybe holding one combined Cooperstown & Oneonta Lions Club event if it could be arranged, rather then trying to do two events so close together. Further discussions are needed. Please bring your ideas on this to the next meeting.

This month’s beer style was Dunkle which is traditionally a dark lager, characterized by depth, richness and complexity typical of darker Munich malts. Deeply bready-toasty, often with chocolate-like flavors, but never harsh, roasty, or astringent; a decidedly malt-balanced beer, yet still easily drinkable.

Member offerings and samples:

  1. George M.: Commercial beer, Sloop Brewing, No Pumpkin IPA, 6%.
  2. Commercial example: Weihenstephaner Hefeweissbier-Dunkel 5.3%, 14 IBU
  3. Commercial example: Schloss Eggenberg Doppelbock Dunkel; malt liquor 8.5%, hop bitter followed by malty caramel sweetness.
  4. Eric B.: Winter Dunkel's Bock 2017; 6.04%, dark Munich malt, special B.  Taste great, aged well, delicious
  5. John M.: Cider, Aldi’s apple juice, brown sugar, Oslo Yeast. Made right in the Aldi's juice bottles. Good, on the sweeter side, not dry.
  6. Tom C.: Crabtree Red Wedding Ale (2019); 4.99%, 23 IBU, Red Ale, Maris Otter, Crystal 40, 90, 120, roasted Barley, Kent Golding @60 & 15, WLP 004 Irish Ale. Nice dry finish.
  7. John M.: No Lactose Milkshake IPA, 6.6%, pilsner, Munich, wheat, rolled oats, chocolate malts. Summit, cascade hops. Yeast: Omega Yeast 061 Voss Kveik (northernbrewer.com); a traditional Norwegian “kveik” strain from the farmhouse brewery of Sigmund Gjernes. This yeast is capable of fermenting across a broad range of temperatures with little change in the flavor profile (68-98 degrees F). John said he typically uses only 1 tsp. per 5 Gal batch.
  8. Frank & Chris: Braggot, 13.1%, pale malt, wheat, caramel 60, with 8#’s honey, angelica and mug wort replaced the hops in this brew. Held up well, very good.

November meeting will be held at the American Legion on 11/15/19 at 6:30pm. A Chicken & Biscuit dinner will be offered for $11.00. Hope to see you there.

Beers Sampled: Style Pilsner: Commercial offerings Pilsner Urquell, Dinkel Acker CD-Pils.
The Pilsner Style originated in Pilsen, Czech, by Urquell in 1842

  1. Matt D. : Sappy Pils.  Made with Maple Sap, very clean, tasty, head retention a little low, only 2-3 weeks in the bottle.
  2. Matt B. : Sunday Pils:  Flaked corn, and some Munich Malt added. Corn/malt flavors nice, very good.
  3. Eric B. : Bailey’s Birthday Beer.  Pils/vienna, Spalt Hops, wyeast Czech pilsner yeast, good, I like it.
  4. Chris H., Frank W. : India Pale Lager, Magnum/Pearl hops, 5.6%, Brewed in January, Dry hopped with El Dorado/Northern Brewer. Extended boil to hit target created a darker more bitter result. 60 IBU’s, Caramel, burnt creme Brulee flavors, very good.
  5. Matt D.: BS ESB  2.5%,  Flaked Barley, Biscuit, Maris Otter, Sterling Golding hops. Green pepper flavors. This was a recipe modified from Ken Shales' book "Brewing Better Beers."
  6. Matt D. : Cafe Latte Stout, 1# Lactose, ¾ cup coarse ground coffee @ flameout & left in primary. Very good, balanced.
  7. George M. : IPA 3.5%, Citrus IPA, passion fruit, nugget/mosaic/citra hops, dry hopped with 1 oz. mosaic, 1 oz. citra. Sorghum aroma, citrus flavors, good. A ton of carbonation (blew the flip top right off the bottle).
  8. Brian G. : Commercial beer, Lord Hobo- Museum Triple IPA 11%, formaldehyde Flavor, strong alcohol.
  9. Wes A. : Lemon Wine #3, 15.8%, 192 oz. Welch's white grape juice, 10# sugar, 14 lemons. Additional zest & juice of 16 lemons in secondary. Very lemon forward.
